My friend at the job has been eating whole foods and wanting new recipes for her family. She asked me if I knew of a healthy cinnamon-raisin recipe of some sort. She got me thinking…<br>

Since I have already been eating Paleo, I miss things like cinnamon raisin toast, oatmeal and raisins, and also Raisin Bran. What I really wanted was that sweet cinnamon-raisin taste without the grains, dairy and refined sugars.<br>

I developed this paleo and gluten-free muffin formula after a couple of failed attempts to obtain the ideal cinnamon and raisin taste I was longing for. The first batch wasn't too bad, but not great. I don't wish to post an average formula on my blog. I really want to buy to be extraordinary so you'll check it out and keep coming back for more! So I went back to work in the kitchen for more experiments and family taste tests.<br>

I'm happy with this cinnamon-raisin muffin formula today. I added a shredded apple as well as the uncooked maple syrup which actually helped bring everything jointly. And a lot more raisins. Dried fruit is not especially Paleo I know, but my kid said, if you are gonna make a raisin muffin mother, there should be some in every bite. Good point. And besides, the raisins seem to soak up a small amount of the maple flavor to create every bite that much more amazing. So now i am all in using the raisins in this recipe. Plus both my kid and hubby wanted a bit more spice, therefore i notched that up a little too.<br>

I understand its summertime, but the aroma and flavors of the muffins remind me of a fall harvest…the fact we reside in Arizona and it's really 110 degrees at this time may have something to do with it.<br>
<br>

1 cup of raisins<br>
<br>

1/2 cup of genuine maple syrup<br>
<br>

1/3 cup of coconut milk<br>
<br>

1/4 cup of coconut oil<br>
<br>

1 tbs of coconut flour<br>
<br>

1 tbs of cinnamon<br>
<br>

1/2 tsp of baking soda<br>
<br>

Coconut sugar, cinnamon & extra raisins to sprinkle about muffin tops after cooking if desired<br>
<br>

Stir all dry out ingredients together inside a dish (except raisins)<br>
<br>

In a larger bowl, mix collectively all wet ingredients<br>
<br>

Shred having a cheese grater one peeled and cored apple. Increase wet ingredients<br>
<br>

Pour the dry ingredients in to the bowl with the wet ingredients and blend well<br>
<br>

Stir within the raisins<br>
<br>

Pour mix into silicon or paper cups inside a muffin tin<br>
<br>

Pre-heat oven to 350 degrees and bake for approx. 20-23 minutes (check for doneness having a toothpick)<br>
<br>

Remove muffin tin from range and lightly sprinkle muffin tops with a dry combination of equal parts coconut glucose and cinnamon natural powder while even now warm. Place several extra raisins on top of each muffin if desired<br>
<br>

Allow to awesome before enjoying<br>
<br>

Makes about 12 muffins<br>
<br>

Keep staying muffins covered in refrigerator, or freeze and reheat later on inside a microwave<br>
